Mole Ice Cream
Yes, its ice cream.... but with mole, we did that
Makes 4 cups
Ingredients:
2 cups heavy cream
½ cup water
1 tbsp vanilla extract
¾ cup granulated sugar
4 tbsp mole negro starter
5 egg yolks
Directions:
- In a small saucepan, add the heavy cream, water, vanilla extract, sugar, and mole starter. Place on medium heat and bring to a simmer, whisking constantly. Once at a simmer, remove from heat.
- In a bowl, add the egg yolks. Using a whisk, mix together the yolks. Slowly begin to pour the cream mixture, a little bit at a time, into the yolks while whisking. The mixture should be smooth and not lumpy. Allow to cool.
- Add the ice cream mixture to an ice cream maker until fully set. You may also place the ice cream mixture in the freezer and mix every hour until set.
