Mole Negro Syrup
TIME: 6 minutes
Yield: 3 cups
2 cups - Dark Brown Sugar
1 cup - Water
½ cup - Butter
1 ½ tbsp - Mole Negro Starter
Add the sugar and water to a small pot and turn on to high heat. Bring the syrup to a boil, then reduce to a simmer. Add in the mole starter and whisk till dissolved. Cover the pot and reduce the heat to the lowest setting. Cook for 5 minutes. After 5 minutes, remove the pot from the heat and add in the butter until completely melted. Pass the finished syrup through a fine mesh strainer and press any remaining mole paste through to ensure the syrup does not have any lumps. Serve immediately or chill to serve later.
