For the holidays, our family launched our 12oz gifting jars, perfect for a family of 4. We wanted to bring you the simplest way to make Guelaguetza's iconic mole at home. Trust us when we say that after a taste of our mole, you are going to want to pour it over everything. (Our starters also make the world's best enchilada sauce.. provecho!)
Guelaguetza's Mole | Makes 4 cups
12oz mole starter (negro, rojo or coloradito)
1 1/2 cups of tomato sauce
2 1/2 cups of broth (chicken, beef, or vegetable)
1/2 teaspoon salt
1 disc (50g) of Oaxaca chocolate (can be substituted for 1 tablespoon of brown sugar)
Mix entire jar of mole paste with tomato sauce in a large saucepan. Stir and simmer under medium heat until paste is fully dissolved.
Add chicken broth, stir occasionally and bring to a boil.
Remove from heat and season to your liking with salt and brown sugar (or our chocolate from Oaxaca).
